Cinnamon Apple "Oatmeal"
GRAIN FREE
Yield: 4-5 servings
Ingredients:
7 apples cut into 1 inch pieces
1/2 cup raisins or chopped dates
1 teaspoon cinnamon
1 teaspoon pumpkin spice
1/2 vanilla bean pod, seeds scraped
1 1/2 cups water
pinch salt
1 cup cashews soaked overnight, drained
bananas, raisins and pecans
Directions:
Cook apples, raisins, cinnamon, pumpkin spice, vanilla bean, water and salt for 20-25 minutes, until apples and raisins are soft.
Cool.
Blend in food processor or immersion blender.
Add soaked cashews and pulse a few times to keep mixture chunky.
