Cinnamon Apple "Oatmeal"

Yield: 4-5 servings

Ingredients:

  • 7 apples cut into 1 inch pieces
  • 1/2 cup raisins or chopped dates
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin spice
  • 1/2 vanilla bean pod, seeds scraped
  • 1 1/2 cups water
  • pinch salt
  • 1 cup cashews soaked overnight, drained
  • bananas, raisins and pecans

Directions:

  1. Cook apples, raisins, cinnamon, pumpkin spice, vanilla bean, water and salt for 20-25 minutes, until apples and raisins are soft.
  2. Cool.
  3. Blend in food processor or immersion blender.
  4. Add soaked cashews and pulse a few times to keep mixture chunky.
  5. Serve warm with your favorite toppings.
